Fail

I had the day off from work yesterday.  I decided that I would make a homecooked meal for Tyson (who had to work), since I had the time in the afternoon to do it.  I already had the recipe that I wanted to try all picked out and was ready to go.  It was The Pioneer Woman's recent recipe for white chili
I was so excited to try it!  I had bought all of the ingredients almost a week ago, but never had the time to make it, because it said to let the chili simmer for 2 hours (to cook the beans).  So I started making it around 4:30pm.  At 6:30pm - I check the beans: crunchy.  7:00pm - I check the beans: really crunchy.  7:30pm - I check the beans: still way too crunchy for having been on the stove for almost 3 hours!  I start to get REALLY upset (also, Tyson is starving to death).  8pm and the beans are still gross, so I throw a pizza in the oven for Tyson.  And to wrap up the story with the beans... at 10pm, they were finally soft.  So, the chili went into the fridge and I will finish making it tonight.

Can anyone tell me why my stupid beans took so long to cook?  Yes, I did have a lid on the pot.  The package directions for the beans said that they would be soft in 1 1/2 - 2 hours, and PW told me to cook for 2 hours, or until soft.  Um yeah, it was over 5 hours for me.

Oh sad! Maybe it needed more heat. If the heat is turned down too low then the beans are basically just getting soft by soaking in the broth. I would bring that liquid to a boil with the beans in it first and then turn it down to medium low. You could also use canned beans that have been rinsed and then you wouldn't have to watch beans cook for two hours.
Please let me know when you are eating the rest of this because I will be inviting myself over...
